QUALITY MANAGEMENT SYSTEMS - FOOD SAFETY GROUND BETWEEN SERBIAN ARMY REFORM

Abstract: Biological and hygienic - sanitary, toxicological, physical, and any other form of food security as a condition elemental quality food. Food safety is imperative in maintaining health. Army of Serbia, as an integral part of society, reforming it, realize nourishment of its members, and will inevitably find the way to the necessity of implementing international normative standards governing this field. Hazard Analysis and Critical Control Point (HACCP) is a method which now forms the basis for ensuring the safety of food, designed to prevent the occurrence of risk in the entire chain of food safety from production, processing, and distribution of food. In order to realize the current situation in the Serbian Army, the issue of food safety and HACCP implementation, respondents were managers of all military restaurants. The results of the survey show that many changes must be made in order to successfully implement HACCP in the Serbian Army. Some elements of the standards applied in the Serbian Army, but was necessary to their refinement and adaptation to the requirements of the standard. Key words: HACCP, ISO 22000, food safety.
